“Cheesecakes that Pop” - Miss Taffy's Cheesecakes of Apex .

These delectable treats are similar to lollipops but in a cheesecake ball hand-dipped in chocolate and decorated with sprinkles and various confections. I had a chance to taste test one of these masterpieces and they taste just as good as they look!

Cathy Wood, the owner operator of Miss Taffy’s, got the idea for these unique pops from a high school friend. However the cheesecake business was all her own! In a time of economic crisis, Cathy’s husband urged her to get a job. Cathy’s husband told her she was crazy for taking a passed down recipe from her grandmother and turning into her own business, which she operates out of her home.

However less than a year later, Cathy’s successful business is booming! “Miss Taffy’s Cheesecakes” serves a number of local Apex restaurants and coffee shops. Besides filling personal orders via phone and her website, Cathy also caters for local events. Recently last year Cathy made her famous pops for the Peak City Film Festival. She is also doing her very first cheesecake wedding cake in October. She plans to expand her business in the direction of weddings in the future.
So let’s get to the good stuff! The cheesecake flavors Miss Taffy specializes in are everything from Southern Nana Pudding, Very Berry, Snicker-doodle to Turtle cheesecake and Dark Chocolate Cherry for Valentine’s Day. Her most unique flavor is the Adam bomb, which is made with a layer of cocoa, cinnamon and cayenne pepper. The most popular cheesecake flavor is Tiramisu made with real ladyfingers imported from Italy! Among the wide variety of flavors to choose from I asked Cathy what her favorite flavor is. “Butterscotch, I could eat it just about anytime of day.”

Don’t see your favorite flavor? Not to worry! Cathy makes custom flavors too! If she’s not familiar with the request, Cathy goes out of her way to research, and do several test trials until she gets it perfect.
Cathy also caters to special diet requests such as sugar-free cheesecakes for diabetics and gluten free cheesecakes with crust made from gluten free chocolate chip cookies. Cathy researches the ingredients down to every detail so that customers can rest assured that they are getting the nutritionally safe and deliciously tasty treat they have been craving!

So what makes Miss Taffy’s confections better than all the other cheesecakes there are to choose from? Cathy claims that her loyal customers prefer her cakes to the traditional dense New York cheesecake style. Her recipe is a German style that has the consistency of creamy whipped moose.
Cathy Wood’s business sense isn’t all dollar signs though. Cathy believes in paying it forward to the youth in the Apex community. Last summer she mentored a young senior in high school who’s aspirations were in the baking business. This opportunity was sponsored by The Capital Area Workforce Development Board, which provides a salary for young students who desire to focus on their career goals. In return, chosen small businesses involved, provide training and experience. This proved to be a truly rewarding experience for both Cathy and Robyn, the young girl she mentored.
